Sugar cookies are my all time favourite Christmas baking item.
So simple, so delicious!
(Makes 12 cookies, you can easily double this recipe to make more)
- 3/4 cup vegan butter
- 3/4 cup sugar
- 1/3 cup chickpea aquafaba
- 1 tsp vanilla
- 1 and 3/4 cups flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Cream the butter and the sugar together. Add the chickpea aquafaba and vanilla. In a separate bowl, mix all dry ingredients.
Add the dry ingredients to the butter mixture and mix until it forms a ball. Wrap in plastic wrap and refrigerate for 2 hours.
Roll the dough out onto a well floured surface and cut into desired shapes. Place cookies onto a parchment lines baking sheet and put in the freezer for 1 hour. Chilling the dough like this is essential for ensuring the cookies don’t spread when baking.
Bake at 350F for 6-8 minutes, removing just when edges start to brown. Transfer to cooling rack, let cool completely before adding decorations of choice!
I used a version of royal icing for mine, but I subbed in arrowroot powder for meringue powder, it worked wonderfully!
