Not going to lie, a lot of the time when you’re eating vegan, it can be hard to eat in a hurry. 

I cook the majority of my meals from scratch, and sure there is always the easy pre-made vegan substitutes, but that shouldn’t make up a large portion of your diet. That’s why I’m excited to share this super quick and easy lunch with you! If you can make a tuna sandwich, you can make this. 

Here’s what you’ll need for one sandwich:

  • 1/2 cup of canned chickpeas, drained
  • 1 tbsp vegan mayo
  • 1 tsp Dijon mustard
  • Generous squeeze of lemon
  • 1 green onion, chopped
  • Salt & Pepper to taste
  • Bread of your choice

Simply mash up the chickpeas with a fork in a bowl, then add all the other ingredients and pile on to your bread. I served mine toasted with some sprouts. Feel free to add anything you would have normally added to a tuna or egg salad sandwich!
