This is the easiest Thanksgiving side ever. The hardest part is cutting up the squash. Seriously. On a day when all your other recipes require care and attention, make this sidedish to give yourself a break. A delicious break.

Vegan Parmesan Roasted Acorn Squash
Serves 12 as a Thanksgiving sidedish, 1-2 pieces each

  • 1 acorn squash, washed, seeded and cut into half moons
  • 1-2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1 tsp vegan parmesan (use Go Veggie brand or make your own by blending nutritional yeast and cashews)

Toss the cut squash with all other ingredients. Roast in the oven on a parchment lined cookie sheet for 35 mins at 400F.
