I’m not sure how I feel about this recipe. Don’t get me wrong, it tastes good. But its strange.

I don’t know if I can get past the texture! I think if you don’t particularly love raw fish, this might be for you. I absolutely love sashimi, so I think I’m expecting it to be exactly like raw fish, which it is not. I’m doing a great sell job on this aren’t I? Anyways, you know Poke Bowls are trendy, and I saw this idea on pinterest and I had to try it. I’m not sure its going to be a staple recipe in my house just yet.

Watermelon Poke

  • 1 cup vegetarian “beef” or mushroom broth
  • 1 tbsp rice vinegar
  • 1 tbsp miso paste
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 2 cups cubed watermelon

Arrange your watermelon in a container that has a lid. Whisk together the remaining ingredients and pour over top. Put the watermelon in the freezer overnight. In the morning, pull it out and let it thaw out. Then drain the marinade, and toss in the following:

  • 1 scallion sliced
  • 1 tsp sesame seeds
  • 1 tsp sesame oil
  • 1 tbsp soy sauce

Mix until evenly coated and then serve over warm rice with your fave veggies.
