Taco Tuesday came early this week, and who am I kidding, I’ll probably do it again tomorrow…

Tofu Scramble Breakfast Tacos

Serves 2, makes 6 tacos

  • 1/2 brick of medium firm tofu
  • 1 tbsp nutritional yeast
  • 1 tsp tumeric
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt & pepper
  • 1/2 can of vegan refried beans (I use Amy’s brand)
  • 6 corn or flour tortilla shells
  • Toppings of choice: I used Bobali Foods Cilantro Lime Jalapeno Pesto on mine, I have also used chipotle mayo and Yves’s breakfast sausage.  Another great customizeable meal, use whatever you have! Mushrooms and vegan sour cream, avocado and salsa, really anything goes!

Tofu Scramble:

Crumble the tofu into a frying pan at medium heat.  Sprinkle on all your spices and saute until evenly coated. If it seems too dry, just add 1 tbsp almond milk.

Heat up your tortillas in a pan, and spread the refried beans on the shells.

Add the Tofu scramble on top and any toppings you desire. Enjoy!
