Taco Tuesday came early this week, and who am I kidding, I’ll probably do it again tomorrow…
Tofu Scramble Breakfast Tacos
Serves 2, makes 6 tacos
- 1/2 brick of medium firm tofu
- 1 tbsp nutritional yeast
- 1 tsp tumeric
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- salt & pepper
- 1/2 can of vegan refried beans (I use Amy’s brand)
- 6 corn or flour tortilla shells
- Toppings of choice: I used Bobali Foods Cilantro Lime Jalapeno Pesto on mine, I have also used chipotle mayo and Yves’s breakfast sausage. Another great customizeable meal, use whatever you have! Mushrooms and vegan sour cream, avocado and salsa, really anything goes!
Crumble the tofu into a frying pan at medium heat. Sprinkle on all your spices and saute until evenly coated. If it seems too dry, just add 1 tbsp almond milk.
Heat up your tortillas in a pan, and spread the refried beans on the shells.
Add the Tofu scramble on top and any toppings you desire. Enjoy!
