One of my favourite hangover cures used to be an Egg McMuffin. Not going to lie, there have been some rough mornings where I would have killed for a vegan version. This week I finally got my shit together to try out Hot For Food’s Vegan Breakfast Sandwich recipe. They turned out so good! I whipped up a quick chipotle mayo by combining vegan mayo, chipotle chili powder, garlic powder, lemon juice and agave nectar, fried up some Yves Canadian Bacon slices and topped it with some avocado. My non-vegan mother-in-law even liked them! Their recipe made me about 8 “egg” patties, so I put the leftovers in the fridge and had breakfast sandwiches all week. I bet they would freeze well too.
