I’m a firm believer that you can throw just about anything into a taco and it will probably be delicious.  The formula I typically follow is Slaw + Salsa + Sauce + Protein. Here’s what we are eating this week:

Quick Lime Slaw

Quick Lime Slaw – so much colour!
  • 1 cup red cabbage, shredded
  • 2 large carrots, julienned
  • 1 handful cilantro, chopped
  • juice of half a lime
  • 1 tsp agave nectar
  • salt + pepper to taste

Toss all ingredients, let stand while you prepare your other fillings.

Cilantro Corn Salsa

Cilantro Corn Salsa
  • 1 can whole kernel corn, unsalted
  • 1 shallot, minced
  • 1 handful cilantro, chopped
  • 4-6 slices of pickled jalapeños, chopped 
  • juice of half a lime
  • salt + pepper to taste

Again, just toss all ingredients, let stand while you prepare your other fillings.

For these tacos, I used Spread Em Kitchen Jalapeno Lemon Cashew Dip as a sauce, spreading it right on the warm corn tacos. Then I sauteed an onion with some crumbled Field Roast Chipotle Sausage, and topped it with the slaw and salsa. Easy peasy, tasty weeknight dinner!
